Quick and Easy Tortilla Soup

I don't have any pictures, because we gobbled it up so fast! We based this recipe off of a culmination of a variety of Tortilla Soup recipes on

Quick & Easy Tortilla Soup

  • 1 box of Pacific Organic Chicken Stock
  • 1 (14.5 ounce) can of Muir Glen stewed tomatoes, coarsely chopped
  • 1 can of Rotel
  • 1 medium onion, chopped
  • 2 bell peppers - I used both green and orange, chopped
  • 1 clove garlic, minced
  • 1 tbs of your favorite taco seasoning (or more to taste)
  • 2 cups cooked chicken or turkey, diced (we used a GF Rotisserie Chicken)
  • Baked tortilla chips
  • Cilantro
  • Low-Fat Shredded Monterey Jack or Mexican Blend Cheese
  • Low-Fat Sour Cream
  • Guacamole
  • Salt, to taste
  • Pepper, to taste


  1. Combine both cans of tomatoes with juice, peppers, broth, onion, garlic, salt, pepper, and taco seasoning in large pot; simmer for at least 10 minutes. The longer you can simmer, the better it will be;
  2. Add chicken/turkey; simmer 3 to 5 minutes. Again, the longer you can simmer, the better it will be;
  3. Take out your plates, and cover the bottom with tortilla chips;
  4. Top individual servings with cilantro, sour cream, guacamole, and cheese.

This sounds good...I have a recipe for GF tortillas...have you made them before?
