Crustless Sweet Potato Pie
Ingredients:
- 2 or more pounds of Sweet Potatoes
- Maple or Pancake Syrup
- 1 bag of mini marshmellows
- 1 1/2 sticks or butter
- 1 cup of brown sugar
- Cinnamon
Directions:
- Clean & boil sweet potatoes;
- Once the sweet potatoes have softened, let them cool - once cooled, peel them;
- Mash sweet potatoes - we prefer with a ricer or a masher;
- Add butter & brown sugar;
- Add cinnamon, to taste
- Add maple or pancake syrup to taste;
- Put the mashed sweet potatoes into a cassarole dish and top with marshmellows;
- Bake at 375 till the marshmellow is browned
